When i crave something its no joking matter. It totally takes over my brain. Chocolate is a true love of mine and when I'm longing for the taste of it...like NOW..i become obsessive. Thoughts of chocolate bacon, chocolate covered raisins, chocolate bars, chocolate ice cream, and brownies have led me to this amazing recipe featured in "Clean Eating" magazine. If you love dark chocolate and don't want to destroy your diet try these babies out!

WARNING they are rich and irresistible! 


"No bake" BROWNIES

Ingredients

1/2 cup raw unsalted almonds
2 tbsp raw unsweetened cacao powder
1/4 tsp sea salt
1 tbsp coconut oil
1 tbsp pure vanilla extract
1 cup dried unsweetened cherries


Directions

In a food processor, mix almonds, cacao powder, and salt. Mix until almonds are small pieces. Add coconut oil and vanilla until well blended. Add cherries.


Spoon batter into 6 inch baking dish lined with parchment paper. Press mixture into pan. Refrigerate for at least 30 minutes.
 Pull parchment paper out of pan and cut brownies into squares.

Top with favorite blended fruit.
I used fresh strawberries and fresh mint!

I have had the best Sunday! I aced the pancake recipe at last and I also managed to squeeze in a date with my hubby! My mom kept the kiddos while Jeremy and I did some shopping! I lucked out on a killer sale at World Market and got some pretty good little dishes for my food pics! Happy GIRL :)

Dinner was simple but so delicious!

Paleo Sweet Potato Pancakes

I have been on a mission to satisfy my craving for pancakes for a while! I have tried 4 or 5 different recipes and they all FLOP. They are either to grainy, don't hold together, or don't cook correctly. Finally, I decided to adapt the recipe to my liking. I LOVE them and hope you do too!

Ingredients:
2 cups sweet potatoes
1/4 cup coconut flower
1/4 cup unsweetened coconut
1tsp cinnamon
1tsp baking powder
1tsp salt
1tbs agave nectar
6 eggs
1tsp vanilla extract
1/4 cup coconut milk
Coconut oil

Directions
Peel and cube sweet potatoes. Boil until soft. Drain. Put cooked sweet potatoes into food processor! ( hand whisking not recommended)
Combine coconut flour, unsweetened coconut, cinnamon, baking powder, and salt in small bowl.
Purée sweet potatoes, eggs, vanilla, and agave nectar in food processor until smooth.
Add dry ingredients to potato mixture! Once well mixed, add coconut milk.
Heat griddle to 275! ( I tested between 250 and 300 and 275 gave best results)
Add a spoon full of coconut oil to griddle and fry up the pancakes! Each side needs 4 minutes to cook.. Or you can flip once you see the sides have browned! I noticed 4 minutes was perfect!

Plate and think "holy MOD"
