I have been on a mission to satisfy my craving for pancakes for a while! I have tried 4 or 5 different recipes and they all FLOP. They are either to grainy, don't hold together, or don't cook correctly. Finally, I decided to adapt the recipe to my liking. I LOVE them and hope you do too!
Ingredients:
2 cups sweet potatoes
1/4 cup coconut flower
1/4 cup unsweetened coconut
1tsp cinnamon
1tsp baking powder
1tsp salt
1tbs agave nectar
6 eggs
1tsp vanilla extract
1/4 cup coconut milk
Coconut oil
Directions
Peel and cube sweet potatoes. Boil until soft. Drain. Put cooked sweet
potatoes into food processor! ( hand whisking not recommended)
Combine coconut flour, unsweetened coconut, cinnamon, baking powder, and salt in small bowl.
Purée sweet potatoes, eggs, vanilla, and agave nectar in food processor until smooth.
Add dry ingredients to potato mixture! Once well mixed, add coconut milk.
Heat griddle to 275! ( I tested between 250 and 300 and 275 gave best results)
Add a spoon full of coconut oil to griddle and fry up the pancakes!
Each side needs 4 minutes to cook.. Or you can flip once you see the
sides have browned! I noticed 4 minutes was perfect!
Plate and think "holy MOD"
